Đậu xanh ngâm khoảng 4-5 tiếng để hạt đỗ nở mềm (ngoài ra có thể ngâm đậu xanh với nước ấm nhé). Rang mè chín.
Rửa sạch đậu lần nữa cho vào xửng hấp chín cùng một chút muối.
Khi đậu chín và còn nóng dùng môi cán đậu mềm, tơi. Sau đó rây đậu xanh đã tơi qua rây một lần nữa cho thật mịn.
Hòa một ít nước với 150 g đường đun sôi. Cho đậu xanh và vani vào khuấy đều tay. Khuấy liên tục để chè không bị cháy.
Khi nước cạn, đậu và nước đường quyện vào nhau sền sệt tắt bếp cho chè kho ra khuôn, rắc ít vừng rang lên trên mặt. Nhâm nhi một miếng chè kho cùng tách chà nóng còn gì tuyệt hơn nhỉ!
